The Harper & Cordon Chocolate Guide
Everything You Need to Know About Chocolate
Tasting Our Chocolate
To fully appreciate our chocolates, allow them to rest at room temperature before tasting. Begin with a small bite, letting the chocolate melt slowly on your tongue so the layers of flavor unfold. Pairing with tea, coffee, or even wine can enhance the experience, but our chocolates are made to shine on their own.
What Chocolate do We Use?
We use only premium couverture chocolate, known for its high cocoa butter content and smooth texture. This allows us to create chocolates that melt beautifully and deliver a deep, nuanced flavor. It’s the same standard used by professional chocolatiers worldwide, ensuring every bite feels indulgent and refined.
Storing Harper & Cordon Chocolates
Our chocolates are best enjoyed when stored in a cool, dry place away from direct sunlight, ideally between 16–20°C. We don’t recommend refrigeration, as sudden changes in temperature can affect the texture and flavor. If kept properly sealed, each bite will stay as delightful as the day it was crafted.
Handmade in Medan, with No Preservatives
Every Harper & Cordon chocolate is handmade in our Medan production kitchen, crafted in small batches with care and precision. We believe in pure flavors, which is why no preservatives are ever added. This keeps our chocolates honest, fresh, and indulgent, just as they should be.
White Spots or Chocolate Blooms
If you notice white streaks or spots on your chocolate, it’s called “bloom” and happens when cocoa butter rises to the surface due to temperature changes. While it may alter the appearance, it is completely harmless and does not affect taste or quality. Your chocolate remains safe and delicious to enjoy.
